I do use butter before I put the eggs in, but I love butter, especially after it is a bit browned and I figure the beneficial effects of a bit of iron outweigh the harmful effects of a bit of butter. I don't trust non-stick. After you properly "season" the cast iron pan, don't wash with soap. Just hot water works for us (if we use enough butter) or hot water and rock salt (if we haven't used enough butter).[/quote]
