I disagree with the "it's the institution, not the people" thing. I have frustrations with the church, but I find individual Catholics frustrating, too. Most individual Catholics I meet are conservative politically and will go on and on and on about the evils of "big government," and yet they seem completely fine with "big religion" and a huge bureaucracy overseeing their spiritual and personal lives.
Most individual Catholics span the spectrum from left to right. On most issues pertaining to economics and social justice, Catholics reflecting the social teachings of the Church, tend to vote liberal. Among all religious voters in the 2008 election, more Catholics voted for Obama than Romney. This tendency to vote Democrat holds for the last four elections. The GOP had thought it could align Catholics and Evangelical Protestants together, failing to recognize that outside of issues like abortion, Catholic and Evangelical Protestant voters have very little in common. All this would seem to belie your perception that most Catholics are "conservative."
