I am Indian.  If I am hosting a large gathering - 40-50 people, I could absolutely use up 16+ gallons of milk.

- Make paneer (Indian cottage cheese) - make the paneer, cut it in cubes, fry it and freeze it.  You can use it to make all sorts of vegetarian curries like butter-paneer, spinach-paneer or appetizers like cheeseballs or tandoori paneer kebabs.  Make rasgullas, sandesh, kalakand, barfi, or milk cakes.  The sky is the limit.  Also, you can make a variety of cheesecakes from paneer that is high in protein and keeps very well.

- Make rice-pudding, custard, rabdi (cooked milk with milk solids), carrot halwa, kulfi (indian icecream) or a large number of Bengali milk based sweets.

- Set yogurt to make lassi, make kadhi (yogurt based curry), use for chaat, make Bengali sweet yogurt or make masala chaas.

Where to keep all the milk bottles?  We either have access to multiple fridges/freezers in our homes or we have access to the fridge and freezers of multiple friends and relatives.

Also, it is ok to cook in bulk because very often we are carrying a dish for a get together or we send food to friends. [/quote]
