I don't see the point of adding cheese to a hamburger. Especially nasty *ss American cheese. But really, any cheese on a burger... 100% pointless. And I can't for the life of me understand how mayo became a burger condiment. Why does a greasy/juicy burger need extra oil? Burger needs a little bit of acidic mustard, that's about it.
I read that chefs believe a high-quality burger shouldn't be dressed with cheese or ketchup. But of course that's not what most of us are getting.
Maybe they “believe” that in order to justify charging $50+ for some ridiculous foie gras burger. But I guarantee, the vast majority of American chefs will happily gobble up an American cheese and ketchup covered burger any day. Remember, Shake Shack was started by Danny Meyer of Gramercy Tavern fame.
