I would like my "carb" day to be fruits/vegetables that I am otherwise missing on Keto, so either sweet potatoes or squashes (pumpkin, spaghetti, etc), or certain fruits (apples, pears, plums) that I am not getting. I'm trying to "up" my carbs so that my body can handle keto on a longer term and that it is more sustainable for me.
