If you do, you just branch it off into another timeline/reality. This is why black widow is still dead. Nothing they can do can change that. The best they could do would be to pull a living black widow from another timeline into their timeline, similar to what happened with Gamora or Thanos. This also explains how even when they pulled thanos from the past into their timeline, everything he had already done like snapped the world, wasn't undone. It also explains why they couldn't just go and kill thanos when he was a baby, as that wouldn't fix anything, it would just spawn another alternate universe/timeline.[/quote]
