You'll be fine with your plan to make them ahead and warm up in the oven that morning. My main comment to the original post was going to be skip the mimosas, but if you already have the champagne you might as well use it. Chocolate chips, whipped cream, sprinkles and syrup are all the toppings you need. I love the idea of a big stack of pancakes with a candle for your DD. You don't need a meat dish. People were invited to a pancake party, they know they're getting pancakes. It's fine. Have fun!!![/quote]
