While most people seem to sympathize with the parents/children in this case, perhaps the man has PTSD or other mental/emotional condition and the incessant crying set him off. No one has identified whether or not the flight attendants tried to get parents to soothe child and they were lackadaisical about it. The only footage we have of them is telling the man to "calm down." Maybe he asked flight attendants (politely) to please ask parents to quiet child and he was ignored.
