If we're feeling lazy and hungry enough to get a rotisserie (instead of buying a chicken, spatchcocking it and shoving it in the air fryer) DH and I just go all in and eat most of it. If we have a side, it's usually just mashed potatoes from the same store. We only do this a few times a year and never really intend to buy one ahead of time. I am a normal sized adult- around 110 pounds- and I can eat half a snall or medium chicken, no problem. I can't imagine just splitting a breast with someone, but I guess I'm a bit of a pig.
For me it’s a time thing. It’s much easier to just run into Whole Foods which is on my way home from work at 4pm and grab a chicken and some frozen vegetables and cornbread. I heat the chicken in the time it takes to cook the vegetables and grill the cornbread. And, I’m sure people will think this is gross or lowbrow, but I usually get a bag of beans for the leftovers. I put cut leftover chicken in a pan with a section of beans and a section of cheddar. I heat it all in the same nonstick pan and pour the molten beans and cheese and chicken over tortilla chips.
