When I buy uncooked salmon, I tend to prefer farmed because it’s fattier, and, therefore, much easier to cook than wild salmon. I’ve had wonderful wild-caught salmon in the Seattle area, though, so perhaps there are other variables in the mix? [/quote] Wild King and Wild Coho are both very fatty. Sockeye is leaner. So, I think it depends on the fish. Plus, I don't like the wild salmon you buy from fish counters (it's usually thawed). I much to buy flash frozen fish, which keeps its texture better. [/quote]
