The vegetarians don't have to eat the gravy, and you can do the mashed potatoes with butter and garlic. It is easy to do Brussel sprouts with a soy and maple glaze, green beans with butter and almonds, pureed butternut squash etc, roasted root vegetables, broccoli slaw, all with vegetarian preparations. We have several vegetarians in our family and they eat well on Thanksgiving. [/quote] If you have several you make a main. They eat, not well.
