We went to France and Netherlands in spring 2022 and Spain a month ago. We also traveled to Canadá and many states. We caught COVID in Florida at Christmas. I think if you haven’t caught COVID by now, you are very susceptible. Just get paxlovid in advance of your travel and go,
How do you get Paxlovid in advance? I'd love to be prepared, but I doubt my doctor will prescribe it "just in case"?
Assuming you are a reasonably intelligent person in possession of their faculties, if your physician will not prescribe non-narcotic/controlled dangerous substance travel and/or emergency reserve medications you need a new physician. There also are online physicians who specialize in such matters. Getting them paid by insurance may be a different matter. Paxlovid in particular needs to be started as quickly as possible, so even if it is available in your destination country it is probably better to have it on hand to avoid delay once you’ve had a positive test.
