I would say a big club has 3 or more teams for both boys and girls at all ages below U14. A big club also has very large established rec program. Mid Sized clubs consistently have 2 teams per age group for both boys and girls. A rec program may or may not be included. Small clubs may only serve boys or girls. If they serve both they rarely have two teams per age group. If they serve either boys or girls almost exclusively then they may be prone to have two teams per age group.
