In at least California it’s been mostly Mexicans including many undocumented for a hundred years since the Mexican civil war.  The death of the Midwestern family farm due to incentives for ethanol and mega corporate monoculture means we get more food from those California (and now Arizona) farms.  But the use of premdominantly immigrant labor in meat processing is more recent — I think it used to be mostly Black people but then the civil eogits movement happened and it turns out some of those Blacl people were able to get better jobs once they were allowed to do so.  
We need to pay more for food if we don’t want it to be produced by people without the full panoply of rights.  I’m willing to do that but given how people complained about food inflation, most Americans aren’t. [/quote]
