Here is how I do the pork, I usually use a bone in roast for extra flavor. preheat to 425 salt and pepper the meat then brown it on all sides in an oven safe pot with a lid set the meat aside and drain the grease off (that is what I meant by undrained ground beef add enough beer or dark cola to give you about an inch in the bottom of your pot, scrape up the bits off the bottom add a sliced onion, 4-6 garlic cloves and 1-2 seeded chopped chipoltles (this is really up to your taste - you can also leave the chile whole and remove it before blending the sauce for a milder taste) salt and pepper your onions etc and add your meat back in cover your dish and turn your over down to 325 let it cook until tender - about 3 hours remove the meat, skim some of the fat off the top, remove the chile if you want to then blend the sauce shred your meat and add it back into your sauce, add salt and pepper to taste I like to serve this on toasted buns with creamy cole slaw.[/quote]
