I’m the instant drinker.  I am by no means an expert, and tend to heavily sweeten my coffee, so I’m not a purist, either, but based on my personal experience:

My favorite is DeLallo instant espresso.  I think it’s actually intended for baking, but I like the espresso flavor and think it’s better than the other instant espressos intended for drinking.  It is beyond my budget, but Walmart often sells it cheaper than the Delallo website.

The next instant I tried, was Trader Joe’s, and with enough additions, I realized I could use it to address my coffee cravings, but then realized that I could use cheaper versions.  Lately, I drink either Aldi’s version of instant Nescafe or the Giant store brand, with Aldi’s being slightly better than Giant’s, but not by much.

As an aside, I’ve found that adding a little pinch of salt to whatever coffee I’m drinking helps with the bitterness.  James Hoffman had a video about this too, but he’s more precise than I am.  I certainly don’t bother with weighing salt and creating a saline solution.
