My husband is from Ecuador and generally I dislike most of the foods he loves. 🫣[/quote] We just got back from Ecuador and some of the things I liked best were: Ceviche Potato soup with chunks of a soft salty cheese and avocado Empanadas Paiche (an Amazonian fish) The pacific fish including tuna and sea bass, often with delicious sauces The local chocolate and stuff like chocolate mousse or ganache I would not ever eat cuy so didn’t try it.[/quote]
