Maybe not quite as tasty if you're going to totally cater to the dairy sensitive people but not the most challenging at all. Turkey, gluten-free sausage cornbread stuffing with vegan butter, mashed potatoes with vegan butter, sweet potato casserole with vegan butter, green beans and/or roasted vegetables. Gravy thickened with gluten free flour. Hardest part is probably gluten free desserts but one or two can be easily bought for those people. No special menu is required for pre-diabetics. They either are mindful of what they eat or they aren't. They can eat turkey and vegetables and then modest amounts of the starches/desserts and manage their blood sugar fine. [/quote]
