OP, first want to agree with those who have said the goal is not to have exactly what each person likes but to provide 1) enough food with 2) enough variety that nobody has to starve. Here are a few options: Costco gyro meat, hummus, costco sized container of pitas, veggies tray, cheese tray that includes Mediterranean-compatible flavors. If somebody is GF they can have meat and cheese and veggies. If somebody is vegan they can have hummus and veg on a pita, vegetarian cheese and hummus and veg on a pita, etc. everybody can find SOMETHING, even if not their fav Sandwiches: Several loaves of bread (maybe a GF option too), assorted lunch meats, assorted sliced cheeses, sliced tomatoes and lettuce, mustard and mayo in squeeze bottles. Salad bowls: Prerinsed lettuce Beans Nuts/seeds dried fruit Croutons Veggie tray Crumbled feta Diced chicken (I like the kebabs at Costco) A few options for dressings Lay a cheap plastic tablecloth across the bottom of your car trunk and set out the ingredients like a buffet line, with dishes/napkins/flatware first then the ingredients in the order it will be used. Or ask around and have somebody bring a folding table.
It needs to be something they can grab and eat, not assemble. Assembly is too complicated from the back of a trunk or even a folding table. Waiting behind someone putting on one crouton at a time, someone who takes too much food at once, unhygienic or makes a mess. Just get a variety sandwich tray that includes wraps, etc. and individual bags of chips, easy.
