I’m pescatarian and mainly cook vegetarian. But I realize that dishes that seem easy to me, may not be to others because their typical dishes may be different than mine. I am always appreciative when a host has vegetarian options, and I don’t want them to feel pressured to overthink whether the options are sufficient for me. I write this not to criticize you, but to try to encourage all of the future hosts reading this thread to not stress so much about what vegetarian items you are serving, it’s thoughtful that you are serving them period. I'm vegetarian and I appreciate it when anyone makes an effort to include vegetarian options. I do think it's helpful to remember that vegetarians need more than just vegetables, which is what the previous poster was trying to explain. OP asked for options and people have given a wide range of suggestions that can easily be made or catered. I disagree that we should just be happy with whatever. Once at a work event the vegetarian option was just a platter of asparagus. That was just not sufficient as a main course, especially when alcohol is being served.[/quote]

Of course a platter of asparagus is not a vegetarian main. But portabello “burgers,” when beef burgers are the other item being served, certainly are a veg entree, and that is what the PP asked the host to not serve. [/quote]
