[/quote] If you get them fresh out of the fryer and eat them there, they are the closest approximation to boardwalk type fries. But it's truly rare they are presented that way. My favorite fries were the way my grandmother made them: peeled, hand cut into thick wedges, soaked in ice water and rinsed, then shallow-fried in crisco in a cast iron skillet on the stovetop.
