You should have insisted it go back and be redone.
My husband worked in a couple of restaurants when he was in his teens and early twenties. He will never let food get sent back to the kitchen when he is eating with us. Too many horror stories. He says it's better to complain at the end. Often times managers will comp the meal, but complaining and asking the food to be redone. No way, never.
When it is literally inedible, you have to send it back or you don't eat. You didn't get to eat. That is unreasonable of your DH to insist that you pay and pretend the inedible food is not a problem.
+1 I also worked in kitchens and it’s like there are two parallel universes in people’s experiences. If food came back there was lots of eye rolling (especially if we were slammed) but very quick attention to remake. Or lots of scolding the person who messed it up in the first place. I don’t send much back to the kitchen ever. I’ll peel off all the raw tomatoes or pick them out if they find their way into my salad, but I can’t eat spinach and I did send a salad back once when the description said “spring greens” and I’d asked the server what that meant and it still came out all spinach.
