But that's not all sauces (just returned from a week in Northern Italy and saw not one gravy-style sauce on a menu). Personally, I make big batches of ragu Bolognese in my slow cooker, which technically takes all day but doesn't require my attention. ATK has a great recipe. I also make a lot of Amatriciana, which isn't especially an ordeal to make. My mom makes a great slow-cooker marinara, which makes me think that the slow cooker might be the answer to OP's issue. It allows for the long simmer to let the flavors meld without having to stand over the stove all afternoon. [/quote]
