One thing I do use ground beef for is Arabic rice. Brown a diced onion in olive oil, add ground beef and cook mostly through. Add arabic seven spice seasoning (sold in international markets or just use some cinnamon, allspice, black pepper) and salt. Add in washed rice, water, cover and cook until done. Top with browned pine nuts or toasted slivered/sliced almonds.
