Colleges aren't dumb either.

They're not going to allow an entire year of Freshmen to defer.  
If this happens, what happens to the next year of kids?
Do they simply not admit 2021 grads?

Some of the top colleges have encouraged gap years and have pretty open gap year policies.  Listen to this podcast w/Dean of Admissions at Davidson where he basically says they will grant more gap year requests this year: https://www.davidson.edu/news/2020/04/02/webcast-what-coronavirus-means-college-admissions. They'll just take more kids off the waitlist to compensate.
