Well, I have the answer on this. At least for me personally. Was out to dinner last night with the most unsophisticated annoying boomer I know, at a mall restaurant known for it's vast menu, and they ordered ... wait for it ... a chicken salad sandwich. Before that, I was on the fence with this, leaning toward it being fine for OP to serve chicken salad for lunch. Now? Nope. Stay away from it, lol. Although for the record, this person did proceed to complain that the chicken salad wasn't any good.
I'm a 30-year-old millennial and ordered a chicken salad sandwich over the weekend from a restaurant on the Jersey Shore. I'm a good home cook and enjoy a variety of foods, but chicken salad sounded good to me so I got it. Anecdotal evidence doesn't really say much.
TBH, you lost us when you said you went to the Jersey shore. Armpit lunch for an armpit area.
