For example, the best HS lax players played travel lax. The best HS baseball players played on the best travel teams. For basketball, AAU teams. I hate that is it is almost necessary to play at that level to be able to get playing time or even make your HS team, and it interferes with their ability to play multiple sports, but that seems to be the case at some schools.
