The child should say politely, "thank you, Mr. Doe, but my parents and I have talked and we would like to go ahead and add [Harvard/Stanford/Duke/MIT] on my list as well as my other schools." Yes, counsellors can be biased (or, from their perspective, look for the greater good) but at the end of the day OP is the mom of her own kids and it's the family and the kid, not the high school, that decides where to apply.
