Stay on-site in one of the cheaper resorts, because having the Disney amenities (ride from the airport, desk clerks who really know the in and outs of fast passes, etc.) is worth it, and even the cheapest resort will still have a pool cool enough to wow a 3yo.  Get your fastpasses set up ahead of time and plan to do like 4 things only (like 2 rides, a parade and a show/experience).  Then only bother with those things and fill the rest of the time with rides with short lines.

My best find in magic kingdom was the monsters inc-themed comedy show.  Inside and air conditioned and perfect for breastfeeding while the older siblings get to do something fund for them and the line is usually very short.[/quote]
