Depends on what you want out of the trip and depends a lot on whether your 3yo still needs a nap each day. If 3yo still needs a nap or if you are one of those families who feels that Disney is a special milestone experience, then I would wait. A 3yo is really too young to enjoy a lot of it, esp with a baby in tow as well. If he needs to nap during the day, you will be really asking for trouble. If 3yo no longer naps and you are fine with a low-key version of disney, then I think you could make it work. Stay on-site in one of the cheaper resorts, because having the Disney amenities (ride from the airport, desk clerks who really know the in and outs of fast passes, etc.) is worth it, and even the cheapest resort will still have a pool cool enough to wow a 3yo. Get your fastpasses set up ahead of time and plan to do like 4 things only (like 2 rides, a parade and a show/experience). Then only bother with those things and fill the rest of the time with rides with short lines. My best find in magic kingdom was the monsters inc-themed comedy show. Inside and air conditioned and perfect for breastfeeding while the older siblings get to do something fund for them and the line is usually very short.
