Maybe the celiac folks can chime in, but would you really do a cookie exchange if you are gluten intolerant? I don't think I would trust what other people are whipping up in their kitchens.
Celiac parent here. Celiac or just gluten intolerant? For us with a celiac no, I wouldn't, not for my kid unless it was coming from another GF household, or perhaps from another food allergen household since I think dealing with one food restrictions does make you more aware in general. Of course my child also doesn't seem to have huge issues with cross-contamination and her 1 year bloodwork check came back normal (meaning our restrictions were working for her), so I may even be a bit more lax about it than some other celiacs. But other folks with an intolerances may be less sensitivity, and their symptoms when accidentally ingesting gluten may be less severe, so I can see how someone who is intolerant would participate. And of course it's good to keep in mind that celiac / gluten intolerances are *not* allergies. Which doesn't mean they're not real medical issues, they definitely are, but it's easier to be a little less cautious about avoiding exposure since the symptoms don't include anaphylaxis and it's a chronic disease requiring management vs one that results in an acute health crises. So for example while dealing with my child's GF diet is a PITA, it's a lot easier than dealing with a severe allergy because I don't have to worry that someone accidentally feeding my kid a cookie could send her to the hospital.
