I roast a chicken or roast beef on the weekend, and use sliced or shredded leftover meat to make sandwiches or salads throughout the week. Would that work? You control the salt as you cook the meat. Otherwise - salad with chickpeas or black beans, fruit/cheese/cracker platter, egg salad sandwich, hard boiled eggs and veggies with hummus. You will need an insulated lunch bag and ice pack.
