I have a breville convection toaster oven, bought off amazon. We use it to make toast in the morning, and to make toasted sandwiches or chicken nuggets or heat up leftovers later in the day. I keep cookie dough in the freezer and we bake just a few cookies some nights after dinner. Yesterday we made just six blueberry muffins. We use it every day - love it. It's simple enough that the kids can use it, and powerful enough to heat up and then bake anything in less time than my oven. The only bummer is that it takes up quite a bit of counter space, but I wouldn't trade it for anything else.
That's what we have. Love it.
+1. We have the Breville -- highly recommend it, but it is expensive. You can use one of the old BBB coupons for 20% off. But the recent ones "exclude" Breville. The old ones (expired) still work. They will honor expired ones.
