I'm also not sure what you meant when you say you were a hard ass when you were younger.  I also think that you seem pretty sure that your business venture will take off, especially when you describe its impending growth as a "when" not "if" situation.  Maybe you're right that she is much more risk adverse than you are.  I'm not sure that's a bad thing, though, and perhaps you could balance each other out in tha regard if you're able to start communicating more directly about your concerns and fears.
