OP, I don’t have a recipe for you, but I want to thank you for the idea! I had been vegetarian for years and it felt good for me, but after getting a meat eater, kids, new job… I kind of fell into the easy meat/starch/vegetables thing (not always, but a thoroughly uninteresting way of eating). My kid asked me to do meatless May and it was so fun to discover all the foods I used to love, and some new ones! In any case, this thread couldn’t get out of my head. I found a few recipes on the internet, but I’m not a recipe follower. I ended up mashing chickpeas, adding all kinds of crunch with celery, red onion, cucumber, finely diced carrots, and a handful of fresh herbs. Added lemon juice, cumin, garlic. Added in some nori i ground up (easy enough as I was making furikake anyway). Added some vegan mayo and Greek yougurt right at serving and it was absolutely delicious. Can’t say it was tuna, but it was wonderful! You could maybe add a small dose of vegetarian fish sauce if you wanted it “fishier” I guess. I enjoyed it for what it was so thank you so much for putting this on my radar! I do have a fish like tofu recipe I found during meatless May if you’re interesting - even 8YO DD loves it! You would easily mash it up for sandwiches.
