I learned this lesson 15 years ago with a previous company and now do not allow my sick leave to accrue above 2 or 3 days at a time. My current company allows us to bank up to 2x our annual in vacation but that will be paid out if/when you leave. Any sick accrued is "left on the table" so as such, I bleed it off, little by little, so as to not ever be in the situation as OP.
This is kind of what my old boss did/would suggest too. We got 10 sick days per year, and every month save july/aug he'd book a day off to use it up. I cant recall if it accrued or if it was dumped in Jan, but either way we couldnt take it with us. May as well use it.
