We have "leftover night" about every 4 nights. I also grocery shop more often and buy smaller quantities of food--just for the upcoming meals (planned out). Downsides are that sometimes it feels that we have no food to snack on, and that I feel like I go shopping all the time. (It's actually every 2-3 days.) Bananas we rarely waste, because banana muffins are my go-to baked good. (I know some people collect aging bananas in the freezer to use for baking, but I'm not that extreme .)
We don't do Leftover night but I do shop every two days or so. Our meals are simple: meat (stored in our deep freeze), veggie, salad and maybe a grain or bread if we are in the mood. Dh takes leftovers to work and we do throw out my son's leftovers. We cook in scaled down portions such that our leftovers are just the meat. We do toss out the occasional half bag of salad of we haven't been in the mood lately. Dh and I also eat leftovers for lunch on our telecommuting days. Biggest tip is to buy only good that you have a plan for. Helps with overbuying
