I love all the suggestions from other posters . . . but then, I love breakfast, as do my DH and older sons. On the other hand, our youngest is not a breakfast fan. We can tempt her with smoothies, breakfast pizza (don't flame -- you can make it with whole-wheat crust, low-fat cheese and lots of veggies) or the occasional breakfast burrito, and sometimes she'll eat these, but other days she'll have just an apple. It drives DH crazy, but I don't stress about it. She is extremely healthy, and while she is slender, she's also strong and energetic (3-season varsity athlete). Her appetite is great at other meals; she eats a healthy and diverse diet -- including a mid-morning snack and another after school. In fact, she is the most adventurous eater among my children and is an excellent cook herself, having taken a number of cooking classes over the years. So, my bottom line advice to you, PP, is to keep trying to tempt your son with yummy breakfast treats, but also look at the whole picture in terms of his overall health and nutrition. Finally, keep in mind that as he gets older, you're likely to see some changes in his eating habits -- particularly in terms of volume of food consumed. As middle-schoolers, our sons started to eat more and more . . . and now as college students they consume truly frightening quantities of food! (Both are athletes, so their healthy appetites are understandable, plus they make me feel better about shelling out so much $$$$ fpr room and board -- we are definitely getting good value there :))
