The pan should be hot enough that the spinach makes crackly sizzly sounds. Fill the pan, the spinach shrinks quickly. When it's shrunk down, add some more. When it's all in there, add a handful of raisins, and half a handful of pine nuts if you have them. Salt to taste. [/quote]
