I am so confused by this post. I'd cook as normal and let him reheat his food when he got home.
OP here. I guess I’m the most confused of all! I’ve been trying to keep our dinner warm for him!
Does he expect a plated dinner when he gets home, and do you want to give him one? When we have family members coming home at different times, we put everything away and let them assemble their own plate, heat it, then add cold elements (salad etc). No one expects to have a plated meal for them ready for them. If you intend on a plated dinner, then assemble it from leftovers when he gets home and heat. I’m not going to judge. My husband and kids prefer to do it themselves because they can then choose their portion sizes. And I obviously prefer that they do it themselves as well. And when I come home late, I absolutely do not want to be handed a plate with too much beef, not enough vegetables, etc. I want to make it myself.
