I just watched what others did for a bit, then got my fish in the basket, hand it to the person behind the counter and tell them how you want the fish prepped by the # on the board. Asian markets have more fish variety than American markets. This is one of the reasons why I'm limited to large metro areas when thinking of moving/retiring. I need an Hmart or Lotte I can drive to within 15/20min.[/quote]
