I made a batch of barley and kielbasa soup (was planning on beef but the stew beef prices were outrageous) -pasta and meatballs -baked bread tofu with couscous Not sure what else.
Do you have a recipe for the baked tofu? Sounds interesting.
Sure, -heat your oven to 400 and put 9 by 12 casserole or baking dish in the oven -cut the tofu into slices, 5 or 6 for a block. Extra firm works best. Press the tofu between paper towels or a dish towel with something heavy on top -make two mixes 1) one egg whisked with 1/2 cup of milk and 2) 1 generous cup of breading (you can use prepared panko or breadcrumbs or you can mix flour with some cornmeal and add garlic powder/salt/pepper/oregano (or really whatever spices sound good) -dip the tofu slices in the egg mixture, then crumbs, then repeat -take the hot pan out and toss in a few tablespoons of butter and put it back in the oven until the butter melts -then put the tofu in the pan with the butter, bake on one side for 10 minutes, if that side looks browned and crispy, flip and bake on the other side (if it's not browned yet give it more time) My kid has decided she likes this better than chicken. -
