Oddly, tripe was one of the ingredients on Chopped the other day (it was one of the shows where fans suggested the ingredients). Most of the contestants, professional chefs, had a difficult time with it but one really nailed it. If your MIL is making it and it is a family recipe then chances are it will be pretty good!
