Dice and sauté a white onion, then add 2 boxes of frozen spinach and cook out the water.[/quote] this is OP. thank you everyone! this is the one I'm going to try first, because it looks the most simple, I can add just a small amount of spinach, and I'm not a big cook. when I say my daughter won't eat any vegetables, I mean ANY. Not for years and years. Not one bite. I mean, even pizza sauce or fruit flavor candy or anything with ANYTHING green even oregano. This is really extreme. So, when she said she's open to lasagna with spinach I have to jump at it but only put a bit of spinach that she won't really taste. Some fo the others look good but I think where the main feature is the spinach won't really work. It can't look to green. But if she goes for this one, then I'll make it a few times and then move on to another. The only bit of concern I have with this one is that the cheese is fairly minimal. I think she's looking for a really gooey, cheesy experience. But trying it tonight! I'll let you know.
