This takes me back to the 90s, when I used goat cheese in salads all the time, either marinated in balsamic, olive oil and and garlic dressing or coated with bread crumbs and fried. I had a cookbook called “Cooking with Caprial” that had some excellent recipes with goat cheese. You’ve inspired me to go dig it up—thank you![/quote]
