What would a vegetarian like to see/eat at a traditional Thanksgiving meal? When I was vegetarian for a minute, I’d I’ve been happy with just the typical sides. Now I feel I could put in a bit more effort to accommodate 2 vegetarians.
I’d like something substantial like eggplant Parmesan or stuffed squash, and to know that some of the sides and maybe a bit of dressing are vegetarian. I’d also be happy with the typical sides, but often, the festive versions are not vegetarian, so that might not leave many choices.
Eggplant parm is literally the most time consuming dish in my repertoire. I use my Italian grandma’s recipe and take no shortcuts. So it’s A LOT to ask for Thanksgiving.
