We covered the insulation with vapor barrier (so it wouldn't tear) and bought 16" deep Elfa shelves when they had the annual sale, and covered the whole end wall of our basement with it. An alternative are these, which hang from the joists (or each other) -- they are just wire frames and you buy shelves or planks at Home Depot to lay across them.
