Carleton is the most into ultimate of probably any school, though that does mean it's far more competitive to make their D-I men's team (one of the top in the country).  They also have a D-III men's team that is very strong (I think they're the only school to play in both D-I and D-III, because so many students there play).

The good news if your son would like to play is that tons of colleges have ultimate teams, both A teams and B (developmental) teams.  LACs are mostly in D-III.  Here are all the D-III men's teams:  https://play.usaultimate.org/teams/events/team_rankings/?RankSet=College-Men
Teams higher in the rankings will be more competitive to get on, though having high school experience is definitely helpful.
