Keep trying with the veggies, try them different ways and try different ones. I hate cherries for example but DD was at a friends and had them and loved them so now I but cherries for her. I tried to get her to like bananas because they are such an easy snack to take on the go but she hates them. So he may like things that you havent thought of or introduced. DD likes cooked carrots but not raw, loves Zoodles in pesto sauce ( spiraled zuchinni) but wont eat grilled zucchini. She likes raw celery dipped in ranch and will eat celery in chicken noodle soup. Loved cherry tomatoes and has them in her lunch every day and will eat raw spinach but not lettuce. So keep trying different things in different ways
You do not have a picky eater. No amount of persuasion is going to get OP’s son to eat doodles or spinach. That being said, OP’s son sound normal to me for a picky eater. It doesn’t seem like it rises to the level of intervention. If he is eating enough to sustain his growth, I would keep offering different foods but let him fall back on familiar foods during set mealtimes so as not to create a power struggle. At 4, things easily become a power struggle.
