Another best hotel I've stayed in which wasn't too pricey was the Best Western Don Jon inside the Medieval walls in Carcassonne, France.  Best Westerns are much nicer in Europe than in the US and the hotel was in a very cool old stone structure in the walled city and our stay there was one of the highlights of my life.  This was a pre-kids vacation.

And lastly, another hotel that is again not too pricey but just lovely is Marina Cay in the BVIs.  The island has just a few rooms and you feel like you have your own private island to yourself.  Not high end luxury, but the beds all have mosquito nets and when you leave the french doors open at night you can hear the water on the beach below the room.  Can't get better than that!
