I dress mine with plain balsamic vinegar to keep the calories down, dressings kill the value of salad. Can you have cherry tomatoes since they don’t have much/impactful fructose? If so, I’d do several cups of spinach, a serving a lean protein, tomatoes, a sprinkling of a cheese you like- I prefer goat or blue on my salads, and balsamic vinegar. That’s a typical lunch if I’m at the office. If I’m home, I scramble two eggs with chopped up tomatoes, spinach, and a slice or two of whatever deli ham or turkey I have around to make a hot meal. Sort of similar, but a hot lunch feels like a treat. Both get me a filling meal at <300 calories. [/quote]
